Instant Jalebits Recipe

Once in a while Adithis Amma Cooks as well...so today it was turn to wear my Apron!

This recipe was given to me by my Aunt (Bedhi / Periyamma); My DD does not like sweets much, and one sweet which she likes is Jalebi !



Recipe is as follows


For making Jalebi

All Purpose Flour - Maida - 1 level cup
Water - 1 level cup
Salt - Pinch
Food color - Orange or yellow a pinch
Baking Soda or cooking soda - 1/4 tsp
1 tbpsn ghee

Oil/Ghee for frying


For 1 cup maida, add 1 cup water, food color , baking soda mix well without forming lumps to make a smooth mixture, add 1 tspn ghee to it now and mix well to make smooth batter. Leave it aside for 5-10 minutes

For Sugar Syrup

1 cup sugar ; 1 cup water; few drops of lemon, cardomom powder

Dissolve 1 cup sugar in 1 cup water, bring it to boil, add 1 tbspn milk and it will make impurities float on top, remove them. Let the sugar syrup until you get 1 string consistency. (it you take a drop and press it in between thumb finger and index finger, you should get a string of sugar syrup). take it off the stove. Add few drops of lemon and cardomom powder

While the syrup is hot and ready, start frying the Jalebis.

Heat oil/ghee in a shallow base pan or kadai (deep base does not work fine for this!) Now pour the batter through a mould (I made a cone using ziplock cover and cut the edge to form something similar to piping cone!) on to the hot oil/ghee in medium heat and flip till it gets nice golden color. Take it off, drain it well and then immediately dip it in sugar syrup and take it out of syrup and place it on to to another plate.

Ta Da, yummy jalebis are ready!

  1. I have seen jalebi makers adding colour to the syrup and dumnking the fried jalebis in the coloured syrup..struck me as a very good idea..
